Bitter melon and carrot meat slices
Overview
My husband often buys bitter melon to eat in summer. In fact, he didn't like to eat bitter melon before. I heard that bitter melon has many effects such as lowering blood pressure, blood lipids, promoting metabolism, clearing the mind and improving eyesight, detoxifying and nourishing the skin, and fighting cancer. He slowly fell in love with bitter melon as he ate it. Although it's not the season for bitter melon now, for his liking, it's okay to eat it occasionally.

Wash and slice the pork, mix well with appropriate amount of salt, starch, light soy sauce and sesame oil, marinate for a while;

Wash the bitter melon, cut it in half, remove the pulp and seeds, cut into slices, rinse and set aside;

Wash the carrots, cut into thin slices and set aside;

After the wok is hot, pour in an appropriate amount of oil and heat it, turn to low heat, add dried chili peppers and stir-fry until fragrant; remove the dried chili peppers and do not use them;

Turn up the heat, add the meat slices and stir-fry until the color turns white;

Add bitter melon and stir-fry over high heat;

Add carrot slices and continue to stir-fry;

After the ingredients are cooked, add appropriate amount of salt;

Add appropriate amount of chicken essence, stir-fry evenly and remove from the pot.
