Steps
-
I bought fresh chicken legs from the supermarket. Wash repeatedly. Add cooking wine, white pepper, and soy sauce and marinate for 20 minutes.
-
Soak the dried mushrooms overnight in advance and wash thoroughly. This must be eaten with dried shiitake mushrooms to make it delicious!
-
Put oil in the pot, put the peeled and diced potatoes into the pot and fry until cooked. Remove from heat and set aside.
-
Heat oil in the pan over medium heat and fry the chicken pieces until cooked through. Don't fry for too long, just five minutes is enough.
-
Use a spoon to gently turn the chicken pieces over to cook evenly.
-
Remove the fried chicken pieces to control the oil and set aside.
-
Put a little oil in a stew pot, add onion, ginger, garlic and pepper and stir-fry until fragrant.
-
Add the chicken pieces and stir-fry evenly.
-
Pour some of the oil you just fried the chicken pieces into. Pour in appropriate amount of dark soy sauce.
-
Five grains of rock sugar on medium heat.
-
After the water boils, simmer on low heat for 20 minutes. Because this is a broiler chicken leg, the time cannot be too long. If it is chicken legs, it will take a little longer.
-
Add appropriate amount of stock, turn on low heat and simmer slowly.
-
Add green and red peppers, mushrooms and potatoes. Once again, turn up the heat a little higher.
-
Continue to simmer for 20 minutes.

It's especially delicious when cooked in a pot. You need to keep a little of this soup, don't make it too dry.
