Prepare required materials.

Peel the winter melon and cut into slices. Soak the scallops in cooking wine and warm water for one hour in advance and set aside.

Blanch the winter melon slices in boiling water until slightly soft and then remove.

Heat oil in a wok, add shredded ginger and scallions and stir-fry until fragrant.

Add the drained winter melon slices and stir-fry until the winter melon becomes slightly translucent.

Pour in the stock or water, then add the scallop soaking water and scallops.

Bring to a boil, then turn to medium heat and simmer for about five minutes.
