Blanch: Put the ribs into a pot of cold water, heat and boil, then remove the foam.

Take out the blood-foamed ribs and wash them with water.

Put the washed ribs into the pot and add water.

Add ginger slices, green onions, white wine, star anise, peppercorns, and cinnamon to the pot and cook for 1 hour.

After 1 hour, put the ribs into the wok, pour the ribs soup into the wok, and pour in the sweet and sour ingredients (sugar, vinegar, soy sauce, oyster sauce, salt, five-spice powder).

Boil for 20 minutes and reduce the juice. Add a small spoonful of balsamic vinegar before serving (because the vinegar will evaporate during the heating process, so add another spoonful before serving to retain the sweet and sour taste)
