Wash the clams and soak them in light salt water for about two hours to spit out the sediment and dirt.

Then change the water and cover the lid, keep changing the water and shake the clams until the water is no longer turbid, then drain the water.

Chop the shallots, garlic, ginger, dried chilies, and chili peppers and set aside.

Pour rapeseed oil into a hot pan. When the oil is hot, add Sichuan peppercorns, ginger, garlic, onions, dried chili peppers, capsicum and a little sugar and stir-fry until fragrant.

Pour in the clams, add a little salt, pepper and white wine.

Stir-fry evenly, cover and simmer for a minute or two until all the clams open their shells.

Add chopped green onion and a little chicken essence and stir-fry evenly.
