【Lanzhou】Hot and sour soup
Overview
This is a long-lasting and very enjoyable soup, especially during festivals when there is a lot of fish and meat. After drinking wine, a bowl of hot and sour soup can appetize, relieve tiredness and sober up the hangover.

Shred the tofu and ham, peel and shred the carrots, and slice the mushrooms.

Beat the eggs and set aside, shred the water-cured fungus, mince the coriander, and mix the water starch.

Pour a little oil into the pot, add the mushrooms and fry until fragrant.

Add shredded carrots and stir-fry for a while.

Pour in water and bring to a boil.

Add black fungus shreds and ham shreds and bring to a boil again.

Add shredded tofu and bring to a boil.

Add cooking wine, soy sauce and salt to taste, pour in water starch to thicken the gravy.
