Processing chicken wings

Boil water in a pot, add chicken wings, green onions, ginger and peppercorns and blanch for a while. Remove and set aside

Add half a rice spoon of water to the pot and add rock sugar

Fry the rock sugar until it turns caramel red

Add chicken wings and stir to coat

Continue to stir-fry until browned, add dark soy sauce and rice wine

Heat the water until the water surface is level with the chicken wings. Not too much. Add bay leaves, angelica root, amomum villosum and dried chili pepper. After the water boils, add salt (if you don’t have those spices, just add five-spice powder)

Bring to a boil over high heat and simmer over low heat for 20 minutes. When the soup becomes reduced, reduce the heat and remove from the pot.
