Spicy and sour pork ears with red oil

I ate and ate without knowing what to eat, and suddenly I remembered the cold pig ears sold at the barbecue stall in my hometown, but there were no ready-made ones in the northern market, only frozen pig ears, and these frozen pig ears were generally a bit smelly, so I couldn’t care less about it. I bought it and tried to find a way to remove the smell.

First use a fire to burn the remaining hair on the pig ears, and then use a knife to scrape off the oil on the surface of the pig ears. Be sure to clean every gap carefully. This is the key to removing the fishy smell, and then wash it several times with clean water.

Put the pig ears in a pot of cold water, bring to a boil over high heat, beat off the foam, add green onion knots, chopped ginger, a spoonful of peppercorns, an aniseed, and two spoons of white wine, turn down the heat and cook for about 25 minutes, that is, you can use chopsticks to poke into the last part of the root of the pig ears.

Remove and soak in ice water until cool. (I changed the ice water twice)

Take out the cool pig ears and prepare to cut them.

When cutting, the knife must be angled at 45 degrees. The thinner the cut, the better.

Slice the pig ears into thin slices and place in a bowl. (Because there are only two people in the family and the pig ears are big, I only cut half of the pig ears)

Cut the ginger and garlic into mince, add a little salt and cold boiled water to soak them to taste.

Pick, wash and chop chives and coriander, chop peanuts and set aside.

Seasoning: four spoons of soy sauce, two spoons of vinegar, one spoon of white sugar, all ginger and garlic water, three spoons of red oil chili, two spoons of pepper oil, two spoons of sesame oil, one spoon of pepper noodles, half a spoon of chicken essence, and half a spoon of MSG.

Pour all the seasonings into a bowl, then add chopped peanuts, chives, and coriander.
