Wash the live shrimps and cut off the long whiskers and lower legs

Open the back and remove the shrimp line

Chop onion, ginger and garlic and set aside

Add oil to the hot pan and stir-fry the minced garlic over low heat until fragrant, then add the onions and ginger and saute until fragrant

Change to medium heat, add shrimp, add sugar, cooking wine, balsamic vinegar, light soy sauce and stir-fry evenly, cover the pot and simmer

Simmer until the soup changes color and thickens. Add appropriate amount of salt to taste, add sesame oil and serve
