Wash the duck meat and cut it into small pieces with a bone chopping knife.

Pour water into the pot, add the chopped duck meat into the pot, and cook over medium heat for 20 minutes.

Use the duck meat cooking time to prepare ingredients: green onion segments, ginger slices, dried chili peppers, Sichuan peppercorns, star anise, cinnamon, bay leaves, tea oil.

Make chili oil: Pour chili powder and Sichuan peppercorns into a small rice bowl. Heat the oil in the pot until it is 50% hot. Pour it into the bowl with the prepared ingredients and use a spoon to quickly stir the red chili oil out. Use a colander to filter out the chili residue and set aside for later use.

Remove the cooked duck meat, drain the water and set aside. Make a bowl of duck stock and set aside. (Leave a bowl of duck stock so that the original flavor of the duck meat will not escape)

Pour tea oil into the pot (remember there should not be any ordinary cooking oil in this step as it will affect the taste of the dish)

Add onion, ginger and garlic and stir-fry until fragrant.

Add salt, sugar, chicken powder, oil, light soy sauce, dark soy sauce, and dried chili and stir well.

Pour in the star anise, cinnamon, bay leaves, and the prepared chili oil and stir-fry evenly. Add the duck stock and simmer for 5 minutes until the flavor is absorbed.
