Wash and prepare the materials for later use.

Add cooking wine and 2 slices of ginger to the water, bring to a boil, then add the pork trotters and beef tendons and blanch them.

Rinse clean after blanching.

Heat oil and rock sugar in a pot.

Add the tendons and stir-fry until browned. Add cinnamon, star anise, bay leaves, ginger slices, garlic and chili and stir-fry over medium-low heat until fragrant.

Add salt, light soy sauce to taste, and dark soy sauce to add color. Boil a small bowl of water and transfer it to a pressure cooker or rice cooker.

Press it until it tastes like you like it, it’s so fragrant.

Add the garnishes and simmer over low heat to reduce the sauce.
