Prepare all the materials first as shown in the picture;

Boil an appropriate amount of boiling water, pour in the duck head and bring to a boil, remove the duck head, pour it into cold water and set aside;

Heat the oil in a pan, add the seasonings (other than chili powder, red pepper, and bean paste), stir-fry slowly until fragrant and thick;

Add bean paste and continue to stir-fry until evenly distributed;

Add 1 bowl of water and bring to boil;

Then pour it into the pot and bring it to a boil;

Add another 2 bowls of water, add seasonings and bring to a boil over high heat (light soy sauce, dark soy sauce, sugar, salt, cooking wine);

Add red pepper and continue cooking;

Bring to a boil, add chili powder and continue to cook over high heat;

After it boils, add the duck head until the soup just covers the duck head; after it boils over high heat, turn down the heat and cook slowly for 2 hours.
