Overview

I have been busy with farming these past few days, so I sent my little watermelon to my grandma’s house, and then I came back and cooked for my mother-in-law and the others every day! Yesterday my husband said he wanted to eat boiled fish, so he bought the ingredients and started cooking it non-stop today, and the result was pretty good! Especially with crushed peanuts sprinkled on top, it’s like no other! ! !

  1. Have all the ingredients ready!

  2. Then cut the coriander, green onions, peppers, Sichuan peppercorns, and ginger into granules

  3. Wash and cut all the vegetables and set aside. Crush the cooked peanuts into fine pieces

  4. Separately remove the head of the fat-headed fish to make fish head tofu soup (see my other recipe to teach you how to make white fish head tofu soup) and then cut the fish into thin slices (see the notes below for how to cut thin slices) and cut the fish bones into chunks.

  5. Put the fish bones and fish fillets into two bowls respectively, add cooking wine, pepper, starch, light soy sauce, spicy fresh, and ginger respectively, then mix well and marinate for half an hour. Then prepare other materials

  6. Boil all the vegetables and add them to the bottom of the bowl as side dishes.

  7. Then cook the most important soup base: put oil in the pot (add more) and sauté the minced ginger until fragrant, then add Pixian bean paste, fresh chili peppers, dried chili peppers, and Sichuan peppercorns, stir-fry until the red oil comes out

  8. Add water or stock, pepper, cooking wine, salt, spicy food, a little sugar to taste in the pot, and bring to a boil to form a soup base.

  9. Then put the fish bones into the boiling soup base, cook for two or three minutes, take them out and put them on a plate.

  10. Then put the fish fillets into the pot and take them out after a minute or two when they turn white and float.

  11. After placing all the fish in the basin, pour the soup base below the edge of the basin.

  12. Then put dried chili peppers and fresh chili peppers on top and pour hot oil!

  13. Sprinkle with minced green onions, minced coriander, and the final highlight: chopped peanuts!
