Steps
-
Dice the shrimps, don’t chop them too finely.
-
Chop the pork leg, add minced chives, 1 tbsp salt, 1 tbsp sesame oil, 2 tbsp light soy sauce, a little minced ginger, 2 tbsp starch water, mix well, and marinate for a while.
-
Add the warm water to the yeast and stir thoroughly until dissolved. Then slowly add the warm water to the flour. Do not add all the yeast water at once. Add it little by little according to the feel of your kneading dough. It’s better to make buns with slightly softer noodles. Cover the kneaded dough with a lid.
-
Leave to ferment in a warm place until doubled in size. The fermentation temperature will directly affect the fermentation time of the dough. In hot summer, the dough will ferment in about 40-50 minutes. In a fermentation environment of 20-27 degrees, the fermentation time of the dough will take about 2 hours.
-
When the fermented dough is peeled off, it will look like a honeycomb inside.
-
Sprinkle a little flour on the chopping board to prevent sticking, place the dough on the chopping board and continue kneading for 3-5 minutes. Then roll the dough into strips.
-
Cut into small pieces of about 15 grams each.
-
Roll out into dough.
-
Wrap an appropriate amount of meat filling and shape into small buns. If you find it troublesome, you can pinch it casually without exposing the filling, and seal the pinch face downward.
-
The kneaded bun embryos must be placed in a warm place for the second fermentation. If the buns are not fermented for the second time, the buns will look dead when they are ready. Just make the buns a little bigger.
-
Apply a little oil on the bottom, not too much, just a little. When it reaches level 7, add the buns. Add 1 teaspoon of flour to a bowl of water to make a thinner flour water. About 1 minute after the buns are put into the pot, immediately pour in the flour and water.
-
Cover the lid and cook on low heat for a while. After you smell the aroma, listen carefully. There will be a crackling sound in the pot. At this time, the crispy bottom has begun to form. Reduce the heat to a lower level and cook for about 5-8 minutes. The buns are cooked. After turning off the heat, do not open the lid immediately. Continue to simmer for about 3 minutes before opening the lid.
