  1. Wash the beef, put it in a pot, add water to cover the beef, add a spoonful of salt and a handful of peppercorns, simmer on high heat for 5 minutes and then on low heat for 15 minutes. After stewing, remove the beef, cool and slice into pieces for later use. (You need butter when buying beef, do not stew the butter. Reserve the beef soup)

Put oil in the pot, fry the buttered ginger slices for 2 minutes, add 4 to 5 dry red peppers (the spiciness depends on your own taste), add the cut beef and stir-fry for 2 to 3 minutes, add salt and stir-fry evenly (you can have a little more salt), add rice wine, vinegar, and light soy sauce and continue to stir-fry for 3 to 4 minutes. Reduce heat to low, add dark soy sauce, bean paste, chopped chili sauce, and garlic, stir-fry for 2 minutes, and serve on a plate.

  3. Do not wash the pot for roasting beef. Pour the beef stew soup into the pot, add less salt and more oil (beef should be more salty and less oily), put the meatballs and ham sausage into the soup and bring to a boil over low heat for about 5 minutes. Turn off the heat and pour the cooked soup into the hot pot.

  4. Put a few slices of green onion in the soup, pour the cooked beef on top, add a few slices of green onion, sprinkle some chopped garlic, and bring to a boil.
