Fried noodles
Overview
A delicious dish that you can start in time even when you get home from get off work. Every portion of fried noodles has its own flavor, and is only seasoned with soy sauce and mirin. Boiled noodles, stir-fried pork slices and raw green onions, mixed with sticky egg yolk, the taste is not amazing but it is enjoyable and safe to eat. For me, I only need a glass of wine to be satisfied.

Salt the meat slices with soy sauce and oyster sauce for 10 minutes. Add a little vegetable oil and salt to boiling water and cook the noodles until they are 70% soft and have a slightly hard core, then take them out, rinse them with cold water and dry them. Beat the garlic, shred the onion, and fry in hot oil together with the chili sauce until fragrant. Set aside another fried egg.

Add the pork belly and stir-fry together. When it turns slightly caramelized, add the vegetables and stir-fry together. Finally, add the cooked noodles, turn to medium heat, gradually add soy sauce until the taste is right, add a little mirin, stir-fry constantly with chopsticks, until fragrant, and take it out of the pot.

Finally, add fried eggs, sprinkle with green onions, season with black pepper and enjoy. Mix the egg yolks into the fried noodles before eating to make them more delicious.
