Less spicy version of dry pot chicken
Overview
I want to eat dry pot, but it’s not safe to eat out recently, so I might as well make one myself! It’s better to buy chicken legs and wings. In fact, it’s best to use local chicken at home. There are no fixed grams of ingredients, just adjust them according to your own taste. I can't eat spicy food recently, so I choose non-spicy peppers, just get the flavor. This is my first time making it. As a home version, it tastes pretty good and I can use it to entertain friends. However, it is still far behind the ones made by my two favorite dry pot restaurants. If you add some spices to boil the red oil, it may taste better. I will update it next time.

Wash the chicken, add a little salt, light soy sauce, dark soy sauce, pepper, and cooking wine to marinate. Then prepare the side dishes.

Prepare onions, ginger, garlic, dried chilies and star anise.

Add a little oil to the pot, fry the bean sprouts for ten seconds, and put them on the bottom of the bowl. Personally, I think the bean sprouts are not very tasty. Mung bean sprouts may be better. This step can be omitted.

Add more oil to the pot, add potatoes, lotus roots, and onions and fry them in oil. I fried the cucumbers together and they were a little burnt. It is recommended to add the cucumbers later. Fry the lotus roots and potatoes for about 30 seconds. Drain the onions and quickly remove them.

Don't pour out the oil for frying the vegetables. Add the chicken and continue frying until the chicken is golden brown. Pour off the excess oil.

Leave a little base oil in the pot, add onions, ginger, garlic, dried chilies, Sichuan peppercorns, and Pixian bean paste, and stir-fry until red oil comes out.

Add celery segments. I wanted to buy celery, but it was not sold in the community, so I didn’t want to go far away to buy it.

Add the side dishes and stir-fry, add salt, light soy sauce, thirteen spices, cumin powder, chicken essence, stir-fry evenly.

Add green pepper and fry until raw. The pot is too small, so it’s a bit difficult to stir-fry...
