  1. Prepare the ingredients: Use a knife to scrape a few small slits diagonally on the fish, then apply flour (a little), soy sauce, salt, oil, rice wine, and sesame oil in turn. Apply evenly. Remember to apply it to the fish's belly as well, and stuff a few slices of ginger into the fish's belly to remove the fishy smell. (Home-brewed rice wine will be more fragrant, and cooking wine can be used instead of rice wine.) Marinate for half an hour (the time can be controlled by yourself)

  2. Ingredients to prepare: coriander, green onions, red peppers, plantains, mushrooms

  3. Heat the pan, pour oil, sauté the garlic until fragrant, add the marinated fish, (do not turn the fish frequently) and cook patiently. During the cooking process, you can add cooking wine, fry the fish until golden brown on both sides, pour a little vinegar, and sprinkle with a little sugar. (If you put less salt in marinating the fish at that time, you can add more now. I put more salt in it then, so I won’t add it now.)

  4. Add shiitake mushrooms, dried chili peppers, red chili peppers, green onions, finally sprinkle with coriander, green onions, drizzle with sesame oil and it's done.

  5. Is this the first time in your life to cook braised fish? It seems...the third time😁, but it tastes great.
