Wash the chicken legs.

Remove and dice the chicken thighs; cut the dried chilies into small pieces; chop the onions, ginger, and garlic.

Add a small amount of salt, starch, cooking wine, some minced onions, ginger and garlic to the diced chicken legs, mix well and marinate for about 15 minutes.

Heat a wok and add plenty of vegetable oil.

When the oil is hot, add the chicken and fry slowly over low heat.

Fry the chicken until golden brown, remove and drain.

Leave the oil in the wok, add the dried chili segments and the remaining minced onion, ginger and garlic, and sauté until fragrant.

Add the fried diced chicken and stir-fry evenly.

Add salt, soy sauce and sugar and mix well.
