Fried Lima Beans with Diced Chicken
Overview
I like to eat lima beans very much. They are powdery and do not take long to cook. They are also very suitable with meat cubes, so I buy a pack of frozen lima beans from time to time. When eating, just take them out of the refrigerator and stir-fry them directly into the pot.

Steps
-
Remove the bones from the chicken and cut into cubes and place in a bowl.
-
Add 1 tablespoon of light soy sauce, 1/3 teaspoon of pepper, 1/4 teaspoon of white sugar, and 1/2 tablespoon of white wine. If the meat feels a little dry, add 1 tablespoon of water and mix evenly. Add corn starch and mix evenly. Finally, add 1 tablespoon of vegetable oil and mix evenly. This way, the diced meat will not stick together and will spread easily when stir-frying.
-
Put oil in the pot, turn on medium-high heat, stir-fry the diced chicken until fragrant, set aside, leaving oil at the bottom of the pot.
-
Add lima beans to pan and stir-fry.
-
Stir-fry until the water dries up, sprinkle in 1/2 tsp of five-spice powder, 1/3 tsp of refined salt and 1/4 tsp of pepper, and stir-fry evenly.
-
Slice the garlic and shallots, put the lima beans aside, place the garlic and shallots on the empty side, and sauté slightly until fragrant.
-
Pour in the diced chicken, mix well with the lima beans, and remove from the pan.
