Roasted Pork with Dried Beans

My colleague is from the Northeast. The dried beans in my hometown are really plump and meaty, so tempting. Use it today to make this most delicious home-cooked dish.

Soak dried beans in cold water the night before and wash the pork belly;

Cut dried beans into sections and cut pork belly into small pieces;

Pour them into a pot of boiling water and set aside for later use;

Heat an appropriate amount of oil in a wok until it is 70% hot, fry the pork belly until it is slightly dry, drain the oil and set aside;

Leave some oil in the pot, add onion, ginger, star anise, cinnamon and red pepper and stir-fry until fragrant;

Pour in the pork belly, appropriate amount of clear soup, add salt, pepper, fresh soy sauce, and oil, and simmer over low heat until the flavors are thoroughly absorbed;

Put the dried beans into the pot and cook together until the flavor is absorbed;

Bring to high heat to collect the juice;
