Fish-flavored eggplant pot

Peel and cut the potatoes, soak them in water and wash off the starch.

Cut the eggplant into strips and soak in water.

Put oil in the pot, add potatoes and fry until cooked

Sprinkle an appropriate amount of cornstarch evenly on the eggplant. Then put it in a pan and fry it.

Leave oil at the bottom of the pot, add minced onions, ginger and garlic, add the meat filling, add cooking wine and stir-fry until fragrant and set aside.

Add eggplant and potatoes and stir-fry evenly.

Mix all the seasonings into a bowl of sweet and sour sauce. Add a little starch and water and mix thoroughly and set aside.

Pour a little water into the pot and cook over high heat

Simmer over medium heat for ten minutes. Add green and red peppers.

Pour in the prepared sweet and sour fish sauce and reduce the sauce over high heat.

Turn off the heat, cover the pot, sprinkle with coriander and simmer for ten to five minutes.
