Oyster sauce tofu
Overview
Tofu is a traditional food. Tofu can be divided into southern tofu and northern tofu. The main difference lies in the amount of gypsum (or brine). South tofu uses less gypsum, so its texture is delicate and its moisture content is about 90%. Northern tofu uses more gypsum, and its texture is older than southern tofu, with a moisture content of 85-88%. Tofu is rich in nutrients and contains a variety of trace elements necessary for the human body such as iron, calcium, phosphorus, and magnesium. It also contains vegetable oil, sugar, and rich high-quality protein. It is known as plant meat. Cut the tofu into small pieces.

Chop garlic, onions, and red peppers. Mix appropriate amount of cornstarch and water.

Add oil to the pot and fry the tofu.

Fry the tofu until both sides are slightly brown, add garlic slices and scallions and stir-fry until fragrant.

Add appropriate amount of boiling water or stock, add light soy sauce and oyster sauce and bring to a boil, then turn to low heat

Cook until the soup thickens, adding appropriate amount of salt for about 5 minutes.

Add minced garlic leaves and diced red pepper.

Pour in water starch.

Shake the pot and turn to low heat to evenly distribute the starch and soup. Collect juice
