Fried Yong Tofu Cocks
Overview
Tofu is highly nutritious and is a high-quality plant protein suitable for consumption by all people. But tofu has a beany smell, so I often don’t eat it because of this. When I made this tofu sandwich, I made reference to some of the practices of the masters and combined it with my own taste. After the tofu sandwich is made, not only does it have no beany smell, but it also makes the dish more nutritious. Eat it while it's hot, charred on the outside and tender on the inside; if you want to add more flavor, you can boil it in the soup for a while, and you can also experience a little bit of the feeling of braised tofu.

Add salt, light soy sauce, oyster sauce, chopped green onion, minced ginger, a spoonful of corn starch, and a small amount of water to the pork filling

Trim the edges to form a regular square and cut along the diagonal to form four isosceles triangle cylinders

The other tofu and meat fillings are also processed in sequence. Take a large plate and sprinkle a layer of cornstarch on it. Place the tofu on the plate and sprinkle a layer of cornstarch on it

Put more oil in the frying pan, heat it until it is about 70% hot, and put the tofu clips into the pan one by one

Fry two pieces until golden brown

After the tofu is set, fry the three sides of the tofu until golden brown, then take it out and place it on a plate

Cut the celery sticks and carrots into small pieces. This step can be done in advance

Pour a little oil into the wok, add chopped green onions and stir-fry fragrant leaves

Add minced celery and carrots to the pot, stir-fry evenly, add salt, light soy sauce, and oyster sauce for coloring and seasoning

Pour into a small bowl of water. If you like the soup thicker, add more water. If you like it thicker, add a little more water. After the water boils, pour in a little water starch to form a thin vegetable gravy

Pour the vegetable gravy over the surface of the tofu clip

It's delicious, charred on the outside and tender on the inside. The soup slowly penetrates into the tofu. It's really delicious with a bowl of rice
