Small tenderloin

Cut into sections about 1 cm square

Add cooking wine, salt, allspice, eggs, starch

Grab it evenly with your hands and marinate for 10 minutes (it doesn’t matter if the marinating time is a little longer, maybe it’s better)

Slice carrots, dice peppers, mince onions and garlic and set aside

Mix the bowl of juice. For the black one, use 2 spoons of light soy sauce, 2 spoons of cooking wine, an appropriate amount of salt, a little sugar, and half a bowl of water; for the white one, use starch, add a small amount of water and an appropriate amount of chicken essence, and mix thoroughly

Heat the oil in the pan until it is 50% hot. Use chopsticks to pick up the meat pieces and add them one by one

Fry until golden brown, remove and control oil

Replace the oil pan with slightly higher oil temperature, about 80% hot (a little smoky). Fry the fried meat pieces again for 30 seconds

Leave oil in the pan, add onion and garlic and stir-fry until fragrant

Add carrot slices and pepper cubes and stir-fry

Add the black bowl juice and bring to a boil. Turn the heat to medium and cover the pot and simmer for 1 minute

Add the meat pieces and stir-fry

Add the white bowl of sauce to thicken the soup, stir-fry until the soup thickens, remove from the pan and serve
