  1. Prepare the ingredients (chicken thighs, chives, ginger slices, peppercorns)

  2. Put cold water into the pot, add chicken thighs, green onions, ginger, and peppercorns. Bring to a boil over high heat, then turn to medium heat and simmer for 10 minutes. Turn off the heat and simmer for about 10 minutes

  3. Prepare seasonings, mince onion, garlic, ginger, coriander, millet pepper, and crush cooked peanuts

  4. Pour the cooked chicken thighs into cold water and soak them in ice-cold water to cool them thoroughly

  5. Put minced onion, minced ginger, minced garlic, minced coriander, millet pepper, pepper oil, chili oil, sesame oil, fresh soy sauce, white sugar and balsamic vinegar into a bowl and mix well to form a sauce

  6. Take out the cold chicken legs, drain the water, and chop into pieces

  7. Pour the sauce over the chicken

  8. Sprinkle with chopped peanuts and cooked sesame seeds and serve
