Overview
Shrimp and eggs are also a relatively famous Chinese home-cooked dish. Although it is similar to fried eggs, it is very different from fried eggs. The eggs have been baked in the oven, and the egg flavor is fully stimulated, while the shrimps hidden inside still maintain a fresh and tender taste. It is a good dish suitable for all ages. Since the Chinese method requires lard to be used to smear the plate and the surface of the finished product, I made a slight modification and used butter instead of pork, which added a little milk flavor and reduced the greasy taste

Peel the fresh shrimps, peel off the shrimps, make a slit on the back, and take out the shrimp threads. The shrimps will be fried beautifully after opening. After all the shrimps have been processed, use kitchen paper to dry the surface moisture

Put the shrimp into a bowl, add the remaining half of the egg white, add pepper and 1 gram of salt, mix well, and marinate for 10 minutes

Crack the eggs into a bowl, leaving half of the egg whites aside. Add pepper, salt and rice wine to the egg liquid

Place flour and yeast powder in a bowl

Preheat the plate in the oven for a few minutes and grease the surface with butter so that the finished product will not stick to the plate and will be more fragrant

Quickly stir-fry the marinated shrimps in a wok until they change color

Pour the egg liquid into the plate and put the shrimp evenly

Preheat the oven to 120 degrees for 5 minutes, then bake in the middle of the oven for 10 minutes.

Adjust the oven temperature to 160 degrees and bake for another 5 minutes. Eggs in the oven puff up quite a bit. It will shrink when taken out and exposed to cold

The baked shrimps have risen and although they have shrunk slightly, the eggs are still very soft and the shrimps are very tender.
