Cut the potatoes into thin strips, then wash them two or three times in water. The fried cake will be soft and glutinous with a crispy texture. If you like a more pink and waxy texture, you don’t need to wash them.

Pour an appropriate amount of light soy sauce, steamed fish soy sauce, dark soy sauce, aged vinegar, and soy sauce into a small bowl, cut in an appropriate amount of garlic and millet, soak and set aside.

Add an appropriate amount of chopped green onion, peppercorns (optional), salt, white pepper, and allspice to the drained shredded potatoes and mix well.

Then gradually sprinkle in an appropriate amount of flour, stirring while sprinkling, until basically every potato shred is covered with flour.

After the pan is hot, add a little oil, then pour the potatoes into the pan, spread them out, cover the pan and fry over high heat for 3-4 minutes, then turn over and continue to fry for 3-4 minutes. (This time is not certain. It depends on the thickness and size of your potatoes. Basically, the potatoes are ready to be cooked when both sides are golden and the potatoes are soft.)
