Overview

We have made three versions of fried yellow croaker, each with its own characteristics. This version has no eggs in the batter and is crispier than the version with eggs. We have also made fried croaker directly dipped in dry flour and it is also very crispy.

  1. Remove the scales and head of the fresh yellow croaker, clean it, and dry it after washing.

  2. Add salt, light soy sauce, dark soy sauce, cooking wine, ginger slices, white pepper, and sugar, stir well and marinate for about half an hour.

  3. At a 1:1 ratio of flour and starch, add a little five-spice powder and an appropriate amount of water, mix well and let stand for a while.

  4. Put the marinated fish into the water and roll it in the batter to coat it with a thin layer of batter.

  5. Heat the oil pan until it is 70% to 80% hot, add the batter-coated yellow croaker and fry.

  6. Fry until the surface is golden and crispy, then take it out.
