Shanghai cold noodles
Overview
Shanghainese have a special liking for cold noodles. During the hot season, almost every household will make a large bowl of cold noodles, a few dishes of various kinds, or make a few more dishes as toppings, just like lunch and dinner. The best way to eat cold noodles is to pair them with a cold drink, red bean shaved ice, or iced sour plum soup, a mouthful of cold noodles, and a mouthful of ice-cold drinks, which makes people feel extremely cool and comfortable.

Prepare noodles

After the water in the pot boils, add the noodles and cook them, then remove and control the water

Put it into a larger plate, immediately add sesame oil, stir well and blow with an electric fan to cool

Add vinegar to the sesame paste and mix well, then pour in cold water and stir evenly to form a thick sauce

Pour fresh soy sauce, oyster sauce, dark soy sauce and water into the pot and bring to a boil, then turn off the heat and wait to cool

First put the noodles into a plate and pour on the sauce, sesame sauce and chili oil, then sprinkle with white sesame seeds and chopped green onion (you can omit the chili oil if you don’t like spicy food)
