Spicy Beer Duck
Overview
Beer duck is a dish with unique flavor and is loved by many diners. There are many ways to make beer duck, and its main ingredients are duck and beer. The duck meat is stewed with beer to make the nourishing duck meat taste more intense. Add an appropriate amount of chili pepper and fermented bean curd to enhance the taste. Have all materials ready. Slice ginger, cut onion into sections, mince garlic, and cut chili into small pieces.

Wash the duck meat and cut it into medium-sized pieces to facilitate the flavor. Remove any duck skin that is too fat.

Put the duck meat into a bowl, add cooking wine, salt, light soy sauce, scallions, thirteen spices, and oyster sauce, and marinate for 20 minutes.

Remove the fat from the duck skin and put it into the pot.

Turn on low heat, press with a shovel, and slowly force out the duck fat.

When both sides of the duck skin turn golden and a lot of duck fat has come out, remove the duck skin.

Add peppercorns, green onions, ginger and garlic and stir-fry until fragrant.

Pour in the marinated duck meat and stir-fry until cooked.

Pour in dark soy sauce and stir-fry until coloured.

Pour a bottle of beer to cover the duck meat, add rock sugar and fermented bean curd, bring to a boil over high heat, simmer over medium-low heat for about 40 minutes, then turn up the heat to reduce the juice.

When the sauce is almost done, add green and red chili peppers, continue to stir-fry over high heat until the sauce thickens, and add chicken essence to taste.

Sprinkle some chopped green onion and coriander, plate and serve.
