Prepare raw materials: mutton (sliced into thin slices), coriander stalks, green onions.

Cut the coriander stalks into sections, and cut the scallions into small sections.

Flatten and chop the garlic, add it to a bowl, add light soy sauce, vinegar, cooking wine, dark soy sauce, salt, sugar, pepper, water, cornstarch, stir evenly to form a sauce and set aside.

Pour water into the pot. When the water starts to bubble, add the mutton and blanch it until the mutton changes color and removes the blood foam.

Pour oil into the pot, add scallions and stir-fry until fragrant.

Add mutton and stir-fry over high heat.

When the lamb is almost done, pour the sauce along the sides of the pot.

Stir-fry the lamb and allow the gradually thickening sauce to coat the lamb.

Finally, add the coriander sticks, stir-fry evenly, pour in sesame oil and serve.
