Braised Chicken Nuggets with Lotus Root
Overview
I originally bought half a chicken with the intention of making a hot pot, but then I had a party and went out to eat. I didn't have time to cook it, so I had to freeze it in the refrigerator. The frozen chicken will not be as delicious when made into a hot pot. I simmered it instead. It is also great to eat it warm in a casserole.

Chop the chicken into large pieces, add salt, sugar and light soy sauce to marinate, cut the lotus root into strips, and prepare the green onion and ginger.

Heat a pot, add oil, add chicken, green onion and ginger, stir-fry, and sprinkle rice wine along the edge of the pot to increase the aroma.

Fry until golden brown, add lotus root and continue frying.

Add appropriate amount of dark soy sauce, sugar, salt and light soy sauce and stir-fry.

Add boiling water to cover the surface and bring to a boil.

Then transfer to the pressure cooker and press for 15 minutes.

Pour back into the pot, add carrot slices, and reduce the juice over high heat.

Remove from the pot, add green onions, transfer to a casserole, and enjoy while heating.
