Prepare the ingredients, wash the fish, smear the fish with salt, cooking wine and soy sauce, marinate it for about 15 minutes

After marinating, apply cornstarch evenly all over the fish

Heat oil (about 70% hot), hold the fish tail in hand, first put the fish head into the hot oil and fry, then slowly slide the fish into the pan and fry until both sides are golden brown and pick it up (because I was in a rush for frying, I didn’t take pictures)

The ingredients are ready: shred the carrots, chop the onions, prepare the garlic, ginger and green onions

Saute ginger and garlic until fragrant, add onion and carrot shreds and stir well

Add two tablespoons of tomato paste and stir well

Prepare a bowl of sweet and sour sauce (soy sauce + vinegar + sugar + wine + water + cornstarch). The ratio is: soy sauce 1: vinegar 2: sugar 4: wine: 0.5: water 4: cornstarch 2

Pour the sweet and sour sauce into the pot and stir-fry the ingredients just stir-fried for another 1 minute

Pour the fried ingredients over the fish
