Red wine and black pepper steak
Overview
My old man likes beef, and even more steak, and it has to be black pepper-flavored steak. The day before yesterday, the old man saw that I bought a red wine glass to post the recipe and take photos, so he opened the red wine at home, but it didn’t taste very good, so he asked me to use it to make the menu and ask him if he wanted to eat steak. He told you without any hesitation: yes! I also carved two cucumber leaves to make the presentation more beautiful, but they were covered up by the big red flowers I picked secretly! The day before yesterday was Mother's Day, and my relatives were not around. Although I am not a mother yet, I will become one eventually, so I will fry a steak for myself to celebrate the holiday in advance and to feed my old man's stomach!

Steps
-
When choosing beef, check the distribution of snowflakes, whether the meat is ruddy, whether the fat is white, and the thickness is about 1-2.5cm
-
Use the back of a knife to hammer loosen the beef tissue, and tap it a few times with the blade
-
Crush some carrots, some onions and coriander, add red wine to cover the beef, cover and refrigerate overnight
-
Take out the soaked beef, add an egg white, an appropriate amount of pepper, a little alkaline noodles, a little soy sauce for color, and mix well
-
Add a little oil to cover to prevent drying and marinate for half an hour
-
Ingredients for preparing red wine and black pepper sauce: chopped onion, freshly ground black pepper, black pepper juice, red wine
-
Add an appropriate amount of oil to the pot, heat it up to 70-80% heat, add the steak (it is best to use kitchen paper to absorb the moisture on the surface of the steak), do not move it just after placing it in the pot, and let the steak set
-
Flip once every 15-20 seconds and continue to fry the other side until browned. Choose your preferred degree of doneness to control the frying time. After frying, take it out of the pan and place it on a plate. It is recommended to let the freshly cut steak stand for 5 minutes before eating, as it can retain more moisture
-
Leave a little oil in the pot, stir-fry the chopped onions over low heat until lightly browned
-
Add appropriate amount of black pepper juice and continue to stir-fry over low heat until fragrant
-
Pour an appropriate amount of red wine
-
Boil the red wine and black pepper sauce and thicken it. You don’t want to eat the filterable residue of the chopped onion
-
Sprinkle a little sea salt on the steak, drizzle with black pepper sauce, and serve
