Overview
Braised lion head is a dish often eaten during Chinese New Years and festivals. It is also one of the classic traditional Han dishes in Yangzhou and belongs to Huaiyang cuisine. It consists of four meatballs that are golden in color, fragrant and lifelike in shape, so they are also called Sixi meatballs, which mean happiness, wealth, longevity and joy in life. It is often used as the finale dish in wedding banquets, birthday banquets and other banquets to take its auspicious meaning. Lion's head is really easy to make, but to make it delicious, you really need to put in a little effort and be careful. The meat must be 30% fat and 70% lean, and the meat filling should not be too firm. Add more juice so that it tastes moist. Water chestnuts are indispensable. Chop them and put them in. You can also use minced lotus root to make the whole meat ball taste soft and crispy.
