Purple potato cake
Overview
I like to make various pancakes for breakfast, such as egg pancakes, carrot pancakes, pumpkin pancakes, zucchini pancakes, etc. What I make most is potato pancakes, but I have never written a recipe. Recently, a friend sent me some purple potatoes. This kind of purple potatoes is rare, but this is the first time I have seen them. My greatest curiosity about life is reflected in eating, and I have a tireless spirit of exploration when it comes to eating. Except for the different color of the potatoes, this potato cake is no different from ordinary potato cakes. It is equally suitable to replace it with ordinary potatoes. Don't ask me whether the recipe is authentic or not. I don't know how to make it authentically. I cook all the dishes as I like. All I can say is that it doesn't taste bad. Prepare ingredients: three purple potatoes, one carrot, one green pepper, one egg, appropriate amount of flour, and appropriate amount of green onions.

Peel and wash purple potatoes and carrots, wash and set aside peppers.

Cut the purple potatoes into shreds and set aside (I’m not showing off how finely I shred them, I just think the color is pretty).

Put the chopped ingredients into a basin, add a small spoonful of salt, an appropriate amount of black pepper, and an egg, and stir evenly.

Add appropriate amount of flour (if it is very dry, add a little water).

Preheat the electric baking pan and add appropriate amount of peanut oil.

Use chopsticks to add the mixed shredded potatoes, try to make it into a round shape and flatten it with chopsticks.
