Overview
Sixi Castanopsis Bran is a very traditional and classic side dish in Shanghai. It is red in color and rich in aroma. The roasted bran absorbs the fragrant vegetable juice, which is salty and sweet. The combination with mushrooms, fungus, and peanuts adds a bit of nutrition.

Prepare materials.

Clean the peanuts, put them in the pot and cook for 10-15 minutes, take them out and set aside.

Soak the roasted bran until soft, then wash it with clean water like a sponge. Clean and cut into small pieces.

Add water to the pot, add a spoonful of salt, and cook the roasted bran for 3 minutes.

Remove the roasted bran and rinse it with cold water. After cooling, squeeze out the water and set aside.

Soak the fungus, shiitake mushrooms, and daylily, tear the fungus into small florets, cut the shiitake mushrooms into pieces, and cut the daylily into sections

Put oil in the pan and fry the bran until golden brown. Dish out and set aside.

Cut the green onions into sections, shred the ginger, and prepare a star anise.

Put a small amount of oil in another pot and sauté chives, ginger and star anise over low heat.

Add fungus, mushrooms, day lily, and cooked peanuts and stir-fry.

Add the fried roasted bran and stir-fry together. Add light soy sauce, cooking wine, sugar, oyster sauce, and an appropriate amount of water and simmer over high heat for 7 minutes. Add sesame oil before removing from the pan.
