Pickled garlic
Overview
Every year when new garlic sprouts come out, I make this pickled garlic sprouts dish, which is sour, spicy and crunchy, and is an appetizer for meals.

Prepare a handful of garlic moss to wash and set aside.

Prepare accessories.

Wash the garlic and cut into small pieces.

Cut the ginger into shreds and cut the millet into small rings.

Put the chopped garlic segments into a bowl and place the chili rings on top.

Add a spoonful of allspice.

Pour oil into the pot, add shredded ginger, star anise and peppercorns and fry over low heat until fragrant.

Pour over the garlic.

Add a spoonful of salt and half a spoonful of sugar.

Add light soy sauce.

Add sesame oil.

Finally, add minced white vinegar and drizzle with garlic, stir evenly, cover with plastic wrap and marinate for two hours.
