Dongpo Pork
Overview
Dongpo pork, also known as rolled pork, is a traditional famous dish of the Han people in the Jiangnan area. It belongs to Zhejiang cuisine. It uses pork as the main ingredient. The dish has thin skin and tender meat, bright red color, mellow and juicy taste, crispy but not broken, fragrant and waxy but not greasy. Dongpo meat is well-loved in color, aroma and taste. Slow fire, less water, and more wine are the secrets to making this dish. Rolled pork is a well-known dish in Putian, Fujian. Putian rolled pork has a high status in the local area. Because it is stewed and rolled, it can be known as rolled pork. Rolled pork, braised pork, and Dongpo pork are a kind of meat with different names. Scrape and clean the pork belly, put water in the pot and boil, then put the pork in and blanch it, take it out and wash it.

Prepare onions, ginger, and meat. If the pot is small, cut off the onions, smash the ginger into pieces, and cut the meat into square pieces of the same size.

Place a layer of green onions on the bottom of the pot.

Put the meat in and arrange it. If you don't like the big pieces, you can cut them into smaller pieces. Place the beaten ginger on top of the meat.

Pour in the rice wine, soy sauce, dark soy sauce, sugar, and water.

Cover the lid, bring to a boil over high heat, then reduce to low heat and simmer slowly for an hour and a half. At this time, the juice is reduced. If the color is not uniform after opening the lid, just turn the meat over and cook for 1-2 minutes.

Arrange the meat on a plate, do not put the vegetables first, put it in the pressure cooker and steam it. After the high heat is boiled, turn to low heat for 12 minutes. The time can be adjusted according to the softness and hardness of the meat. If you don't have a pressure cooker, you can also use a steamer to steam it for a longer time.
