Crispy hand cakes
Overview
Nowadays, the most popular snack on the street and in front of the school is this Taiwanese hand cake. Every time I pass by, I will see a queue at the stall. I bought it and took it home to study it carefully. I imitated it very successfully and at least it got my mother's approval!

Add warm water to flour, then add 10g of oil into it and knead it into a dough

It will not be smooth at first. After kneading into a ball, let it rest for 15 minutes

Knead again and it will become a smooth dough easily

Divide the dough evenly into 3 equal parts, roll into smooth balls, and rest for 30 minutes again!

Heat an appropriate amount of oil in the pot, add peppercorns and scallions and fry until fragrant

After the dough has rested, apply a layer of oil on the chopping board, take a small portion and roll it out into a large rectangular piece of dough, so thin that you can see the chopping board

Sprinkle with salt and allspice (you can omit the allspice if you don’t like it)

Then fold it up like a fan from bottom to top. The dough is very thin, so be careful when folding it

After it is ready, flatten it and roll it into a cake shape with a rolling pin
