Korean Fried Chicken
Overview
I have long heard that Korean fried chicken is very delicious. I have never bought any oil for fried food. Needless to say, it is hygienic to make it yourself. I accidentally saw many posts on the Internet introducing fried chicken. I also synthesized and modified it to suit my own taste and make it easier to make at home. For example, the one that requires sake was replaced with rice wine. I can’t say how authentic it is, but it tastes good. The fried chicken is crispy and fragrant when wrapped in sauce, which is a success! The following is my own experience

Prepare the chicken breasts, wash them and set aside

Cut into small pieces

Add cooking wine and a little light soy sauce to the chicken

Pour the chopped onions and minced garlic into a bowl and marinate for about half an hour (you can extend the time for more flavor)

Add 4 tablespoons of glutinous rice flour to an egg and mix into a paste (if it’s a little dry, add a little water)

Put the marinated chicken into the batter and coat it in batter

After wrapping, put it in corn starch and coat it with a layer of flour

Then press it with your hands to make the chicken batter coat the starch firmly, so that the chicken can be fried crispy

Add an appropriate amount of oil to the pot, heat the oil to about 160 degrees, pour the chicken in and fry until it is set

Fry the chicken once and take it out

Fry again until cooked

When fried to such a golden color, you can pinch it with chopsticks and feel the surface is hard. In fact, the chicken is also very delicious at this time, a bit like KFC

Remove the fried chicken pieces and control the oil

Change the pan and add a spoonful of Korean sweet chili sauce, stir-fry the onions and garlic

Add enough water to let the sauce simmer, then add a spoonful of honey and tomato paste to adjust the color

The sauce in the pot is simmering and the bubbles are getting thicker and thicker

Quickly pour in the chicken nugget coating sauce (do not cook it with the sauce in advance, otherwise it will not be fried chicken and will not be crispy)

Sprinkle some cooked sesame seeds when serving
