Braised pork trotters
Overview
Cantonese people must have pig's trotters during the Chinese New Year. Pig's trotters are called pig's trotters in Guangzhou. Pig's trotters have the meaning of being handy and getting rich. I made braised pig's trotters once before this year. The marinade for braised pig's trotters was prepared by the boss at a grocery store. It tasted great! Add more peanuts to the braised pig's trotters, which not only increases collagen, but also combines meat and vegetables to make it more enjoyable.

Ingredients
Steps
-
Brine ingredients: star anise, cinnamon, tangerine peel, strawberries, cardamom, cumin, 1 pinch of peppercorns, a little cloves, bay leaves and fragrant sand, dried chili peppers.
-
Put the marinade into the bag.
-
Use a spray gun to remove the hair from the pig's trotters. I don't have a spray gun. Put the pig's trotters on a gas stove over low heat to remove the hair from the entire pig's trotters. The pig's skin will be more fragrant and elastic after being burned. Use a knife to scrape and rinse the burned pig's trotters.
-
Blanch the pig's trotters in a pot with cold water, then rinse the blood foam from the pig's trotters with cold water and chop into pieces.
-
Put a little water and rock sugar in a wok, melt the rock sugar over low heat until the rock sugar turns amber.
-
Add the pig's trotters, stir-fry, and stir-fry the pig's trotters until the skin turns golden.
-
Add ginger and garlic and stir-fry, then add cooking wine.
-
Add light soy sauce and dark soy sauce.
-
Stir-fry the pig's trotters and seasonings until the pig's trotters are red in color.
-
Add boiling water to cover the ingredients and marinade bag, then add peanuts, cover and bring to a boil, then reduce heat and simmer until the pig's trotters are soft. You can add salt to taste before turning off the heat.
