Don't say I'm willful, I really like pig's offal. Basically stir-fry it and add spicy chili, I think it's great.

Cut the pork loin and remove the white stuff in the middle until there is nothing left. (I don’t know what the white stuff is called. I heard the butcher said it’s called waist sao. It’s such a strange name.) Then soak the pork loin for an hour and add Sichuan peppercorns and a little cooking wine to the water.

Soak the pork loin and cut it with a knife. . It doesn’t matter if it looks water-stained!

Let's boil a pot of water. After the water boils, blanch the pork loin in the water, take it out for about a minute and set aside.

Let's cut all the side dishes. (As shown in the picture, it’s OK. I won’t go into details one by one. You can cut it into any shape you like. It depends on what you like. They are all “imported goods” anyway, hehe!!)

Heat the oil in the pot until it is 70% hot.

Add onion, ginger and garlic cloves to release the aroma.

Then add green and red peppers. . Stir fry for a while.

Then add the blanched kidney flowers. Stir fry. . .

Add a little oyster sauce and continue to stir-fry. . .

Add garlic sprouts and stir-fry for one minute.

Cook a little light soy sauce, adjust the color, then turn down the heat and add an appropriate amount of salt and MSG. In fact, there is basically no need to add salt, because oyster sauce and light soy sauce are salty, but you still have to taste it to see if you need to add it. After adjusting the taste, stir-fry a few times, turn off the heat and serve.
