Blanch celery in boiling water and chop into pieces

Add minced shrimp, minced pork, wine + minced onion, ginger and garlic, mix well and add in minced celery. Add 2 teaspoons of salt, 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, a little sugar, and a little thirteen-spice seasoning and mix well; add an egg, mix well, and add 1 tablespoon of oil to lubricate the filling.

You can blanch a meatball in celery water and try to see if the taste of the meat fits your daily eating habits

Make wontons. Just fold it in half and pinch it in half.

Adjust the wonton soup, usually use broth if you have broth. In order to reduce fat, I use boiling water, add salt, green onions, sesame oil, dried shrimps, seaweed, vinegar. If you like spicy food, you can add chili oil or chili powder. If you like pepper, you can add some. Put the wontons in a pot of boiling water, then order cold water three times, open the lid and cook the last time, remove them and put them in a soup bowl.
