-
Main ingredients: King oyster mushroom, chicken breast, fried peanuts, green onion, garlic, dried chili pepper, Sichuan peppercorns
-
First, let’s deal with the ingredients: dice chicken breast, dice king oyster mushrooms (the king oyster mushrooms will shrink when stir-fried, so cut them slightly larger), cut green onions into sections of about 1 cm, cut dried chilies into sections, slice garlic, and peel fried peanuts and set aside.
-
Add a little salt, pepper and cooking wine to the cut chicken breasts, mix well and marinate for a few minutes.
-
Add 1 teaspoon of starch to the marinated chicken breast and mix well again
-
The chicken breasts are a bit sticky
-
When marinating chicken breasts, prepare a bowl of gravy; put the sliced green onions into a large bowl, add 2 teaspoons of sugar, 4 teaspoons of balsamic vinegar, a little salt, an appropriate amount of light soy sauce, and 1 teaspoon of starch, mix well and set aside
-
Heat oil in a pan, add marinated chicken and stir-fry
-
Fry until chicken changes color and serve.
-
After scooping out the diced chicken, add in the chopped diced king oyster mushrooms and stir-fry until the king oyster mushrooms change color slightly and serve.
-
Leave a little remaining oil in the pot, add peppercorns and stir-fry over low heat.
-
Fry the peppercorns until fragrant. Dish them out. Add garlic slices and dried chili and stir-fry until fragrant
-
Add the smooth diced chicken and king oyster mushrooms
-
Quickly stir-fry evenly and then add the prepared gravy
-
Stir quickly over high heat and add fried peanuts.
-
Quickly stir-fry again and turn off the heat.
-
Finished product! Sweet and sour and slightly spicy, it goes well with rice!
