Three Cup Chicken
Overview
Three Cup Chicken is a famous dish in Jiangxi. When I was working as a waiter in a hotel many years ago, a chef mentioned Three Cup Chicken when he gave us a training class. This dish is made by adding a cup of rice wine, a cup of soy sauce and a cup of sesame oil. However, now in some Taiwanese restaurants, it has become Taiwanese three-cup chicken, which adds spices such as nine-layer pagoda to carry forward the three-cup chicken dish.

Wash the chicken and cut into medium pieces. Prepare ginger slices, garlic seeds and red pepper.

Boil water in a pot, add chicken pieces, and boil for a while.

Remove the chicken pieces.

Slice the ginger, slice the red pepper, cut the garlic sprouts into sections, and peel the garlic.

Prepare a cup of sweet rice wine, a cup of sesame oil, and a cup of soy sauce. As long as the portions are the same, I used less soy sauce because I was afraid that it would be too black and not good-looking. No, it doesn’t look good this way.

Heat oil in a pan and add ginger and garlic seeds.

Add the chicken pieces and stir-fry for a while.

Pour in the red pepper, a cup of soy sauce, a cup of sesame oil, and a cup of sweet rice wine. Add salt and stir-fry.

Add a little water, just enough to cover the chicken, cover the pot and cook until the water dries up, then add a few grains of rock sugar. It’s out of the pot.
