Overview
Spicy hot pot originated from Jinyun Mountain in Chongqing. It is a fusion of local spicy flavors from Sichuan and Chongqing. Spicy hot pot originates from Tujia flavor and is a common practice of local people. It is characterized by spicy, spicy, fresh, fragrant, oily and mixed. Although Mala Xiangguo has a spicy taste, it is very popular among diners across the country. During the Spring Festival, friends sit around a table, eat spicy hot pot and drink some wine together. Prepare the ingredients: peel the lotus root and potatoes and cut them into thin slices. After boiling water, put them in a pot and cook for 8 minutes;

We start processing the ingredients: after the pot is hot, add cooking oil. When the oil temperature reaches 50% hot, add the prepared shrimps, fry them halfway, and sprinkle a little salt until the shrimp meat and shells are slightly separated from each other (no need to wash the pot this way, just do it all the way);

When the shrimps are fried, take them out, add the sausages and fry them for 2 minutes;

Add lean meat slices and fry until both sides change color and serve;

After the lean meat slices are put out, we start to stir-fry the base ingredients: select the lowest heat in the electric hot pot, add Sichuan peppercorns and dried chili peppers to stir-fry the aroma;

Add scallions, ginger slices and garlic cloves and stir-fry for 2 minutes;

Add 2 tablespoons of Pixian bean paste and stir-fry until the red oil comes out;

Add half-cooked lean meat slices, celery and coriander stalks and stir-fry for 2 minutes;

Add light soy sauce, sugar, rice wine and thirteen spices to taste, stir-fry for 1 minute;

Add all the ingredients prepared in advance and stir well. If the taste is not enough, add more as appropriate. Stir-fry slowly for about 10 minutes on the lowest heat in the electric hot pot to get more flavor;

Before serving, add 1 teaspoon chicken powder and coriander leaves, stir-fry for 1 minute and serve.
