Chicken stew with mountain mushrooms
Overview
This dish is made from pine mushrooms that I picked in the mountains and free-range chickens raised in the mountains. If you like spicy food, you can add an appropriate amount of chili pepper. After it is cooked, it will have a rich aroma. It is good whether you are entertaining guests or eating it at home.

Wash and soak the pine mushrooms.

Wash the chicken and chop into small pieces.

Pick and wash the coriander and cut into sections, cut the green onion and ginger and set aside.

Heat oil in the pan, add chicken pieces and stir-fry.

Stir-fry until the chicken turns white, add green onion, ginger and star anise and continue to stir-fry.

Add soy sauce to color chicken.

Add pine mushrooms and stir-fry for a while.

Add the braised sauce and stir-fry evenly.

Add enough water to cover the chicken, add vermicelli and simmer over medium heat.

Cook until the soup thickens, add salt and mix well to reduce the sauce.
