Fried herring pieces
Overview
Stir-fried herring is a traditional dish in my hometown. Usually during the Chinese New Year, almost every household will cook this dish. In the old days when there were no refrigerators, fried fish could be stored for a longer time and was not easy to spoil. Of course, fried fish goes well with rice and wine or porridge, so everyone likes it.

Remove scales from the middle section of herring, remove impurities, wash and drain,

Cut the fish into irregular pieces,

Add salt, cooking wine, and pepper, smoke first, and marinate for half a day until the flavor develops.
